This one is delish, but the texture wasn't scone-like for me; I imagine it was user-error. I hear scones are incredibly difficult to get texturally accurate, and so I will keep trying!

Following is a copy/paste of the recipe, which came from this website. I made a couple of slight edits: 1) I did 1/2 teaspoon of lemon extract and 1/2 teaspoon of vanilla extract in the scone; then 2) I added zest to the icing. The lemon flavor was nicely forward, which made me super happy!

Vegan Blueberry Scones

Tender, moist Vegan Blueberry Scones with simple glaze are a wonderful addition to any breakfast or brunch! We had a gathering recently, and I made these delicious treats (from www.delish.com)--well, I modified them so that they're vegan deliciousness!
<span style="font-family: "times" , "times new roman" , serif;">They really turned out great (and they were a party hit!), but I do have additional modifications, which I state below... Enjoy!
<span style="font-family: "times" , "times new roman" , serif;">
DIRECTIONS

<span style="font-family: "times" , "times new roman" , serif;">Preheat oven to 375° and grease a mini muffin tin with cooking spray; I used liners because I wanted them to be handheld for my guests. Pierce sweet potatoes 3 to 4 times with a fork.

<span style="font-family: "times" , "times new roman" , serif;">Cook potatoes: Place potato on microwave-safe plate and microwave 15 minutes. If your potatoes aren't fork tender after 15 minutes, continue microwaving in 30 second increments. When potatoes are cooked through, scrape filling into a large bowl and discard skin.

<span style="font-family: "times" , "times new roman" , serif;">Note: We boiled the potatoes, because our microwave was out of commission the night we made them. Boiling worked just fine; just remove the skin before boiling.

<span style="font-family: "times" , "times new roman" , serif;">Using a potato masher or fork, mash sweet potatoes until smooth. Add brown sugar, milk substitute, cinnamon, vanilla, and salt and whisk to combine.

<span style="font-family: "times" , "times new roman" , serif;">On a lightly floured surface, roll out crescent sheet. Note: pinch together seams if using the rolls, rather than a sheet.

<span style="font-family: "times" , "times new roman" , serif;">This is the hardest part of this process in my opinion: Cut into 24 squares and place in muffin tin cups. Do use the mini tin! We made a test batch in regular tins, and the pastry dough didn't get quite as crispy in the bottom (my suspicion: too much sweet potato filling).

<span style="font-family: "times" , "times new roman" , serif;">Spoon a heaping tablespoon of sweet potato mixture into each crescent square, then top with mini marshmallows and bake until crescent pastry is golden, about 15 minutes.

Notes

-It’s ok to substitute frozen pineapple or fresh pineapple for the canned pineapple.
-It’s ok to substitute rum for the pineapple juice.
-If coconut starts to look too dark then cover with aluminum foil and continue baking.
-The dessert may look a little soft when removed from the oven but it will firm up as it cools.

This is one of those moments... I made this awesome butternut squash soup for a holiday party we have in December 2014, and it was amazing--sweet but still savory!

YUM!!!

Our favorite butternut squash soup recipe...and the best part? It is made in the slow cooker! Garnish with maple roasted chickpeas for an extra special soup!

ingredients:

For the Butternut Squash Soup:
1 medium yellow onion, chopped
3 medium carrots, peeled and chopped
1 medium butternut squash, peeled, seeded and chopped into 1-inch cubes (about 5 cups)
1 large apple, peeled and chopped (I used Granny Smith)
2 (14 oz) cans low sodium vegetable broth
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons maple syrup
Salt and freshly ground black pepper, to taste

For the Maple Roasted Chickpeas:
1 (15 oz) can Libby's Organic Garbanzo Beans (chickpeas)
1 tablespoon canola oil
1 1/2 tablespoons pure maple syrup
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon salt

directions:

1. Add the onion, carrots, butternut squash, and apple to the slow cooker. Pour the vegetable broth over all of the ingredients. Cook on low for 6 hours or on high for 3 1/2 to 4 hours.

2. Once vegetables are cooked and soft, puree the soup using an immersion blender. Add the cinnamon, nutmeg, and maple syrup. Season with salt and pepper, to taste. If you don't have an immersion blender, you can transfer the soup to a blender (in batches) and puree until smooth. Pour the soup back into the slow cooker and season with spices and maple syrup.

3. While the soup is cooking in the slow cooker, make the maple roasted chickpeas. Preheat the oven to 375 degrees F. Rinse and drain the chickpeas and pat dry with a towel. Remove the skins by rolling them on the towel. In a small bowl, combine the canola oil, maple syrup, brown sugar, cinnamon, and salt. Place the chickpeas on a large baking sheet. Pour the maple syrup mixture over the chickpeas and toss until chickpeas are well coated. Place in the oven and bake for 40-45 minutes, stirring every 15 minutes or so. Remove from the oven when chickpeas are crunchy.

I think my story starts with my mother. My mother is not always open about everything, but when I was a kid, she always had LGBT friends. I remember two of those friends most vividly: Pat (or Booboo) and Erica (or Steve).

Pat was a lesbian and was my mother's closest friend when I was a kid. She was always around, always bring over her girlfriends, always talking about women, and always fun! She was maybe my favorite person ever. I always knew that I could be myself around her, and I always felt loved by her. She might've gotten into a bit of trouble as the years went on--drugs and other things--but she was such a powerful force in my ally-ness.

Erica--well, Erica was a drag queen. I don't recall ever seeing Erica out of costume. I do recall seeing Erica perform several times during my youth. But, I don't remember much else.

And, of course, there's my mother. She's heterosexual, as far as I know. And, sometimes she's a little bit racists. And, frankly, sometimes she says things that I read as homophobic as well, but I don't think that she thinks those comments are homophobic. For instance, she'll refer to someone she sees as a "faggot." I don't particularly care for this word, but my mother is in her 50s, so it's a word that's embedded in her language. Even though she knows the negative connotation behind that word--oh, I've told her--she still says it.

I don't think that my mother ever officially said anything like, "love everybody" or "be an ally." Instead, I think she showed me that I should look for the good in people and that it's okay to be open to diversity.

So, what does being an ally mean to me? How can I be an ally?

Well, GLAAD (Gay & Lesbian Alliance Against Defamation--GLAD is different) says there are 10 ways to be an ally & a friend. Some of those are:
*be a listener
*be open-minded
*be willing to talk
*be inclusive and invite LGBT friends to hang out with your friends and family.
*don't assume that all your friends and co-workers are straight.
*homophobic comments and jokes are harmful. let your friends, family and co-workers know that you find them offensive.
*confront your own prejudices and homophobia
*defend your LGBT friends against discrimination
*believe that all people, regardless of gender identity and sexual orientation, should be treated with dignity and respect

Some of the other things that I think are important about being a straight ally are:
*to stay informed--read, listen to radio shows and podcasts, ask a member of the LGBT community
*support equality

This one is hard to iterate...but I want to make sure I'm always being the best ally I can be and that I'm always being reflexive about my heterosexual privilege.

Too much, in fact.

But, with loss comes thought. Among my thoughts are memories recalled. Many are happy. No doubt some are less than happy. Many require that I fill in the gaps of memories. Also among my thoughts are preparations for my own life and death. Live happy. Live free. Live love. Live life. Die happy. Die free. And, preparations....after life and death. Cremation or burial: cremation. Resting spot: wherever. Some of my happy places are: the resting place near Bonham where John and Elton (my grandfathers) are buried, Starview winery, my grandparents' old house on Hwy 82 in Bonham (across from the railroad tracks and, now, a prison), the adobe house in Lake Worth where we met Gary and adopted him into our little family, Springtown (just Springtown generally...I was happy there)....so many happy places, but ya have to be careful disposing of remains in public places!

*sigh* too much loss. too much.bourgeois galhttp://www.blogger.com/profile/14485015013323978298noreply@blogger.com0tag:blogger.com,1999:blog-756444888206657356.post-49704269001061242082011-12-27T09:45:00.001-06:002011-12-27T09:45:13.904-06:00December PicturesOk, these aren't for each day, but it's a glimpse into the month of December!

and, here...

Because I keep seeing the "warnings" about phone contacts on FB, I've done a bit of reading and looking around. I'd like to say, and pay attention here, that the only phone numbers that I can see on that "Account->Edit Friends->Contacts" list are those of you who have also posted your numbers (to be exact, neither my mother's nor my mother-in-law's numbers are available on this page).

Now, this isn't to say that some of you _might_ be able to see contact information for some of your friends/family members who are not on FB--who am I to disagree with what you've seen with your own eyes?! To the contrary...I totally believe you, but I think, generally, this is your own doing: perhaps you have a "smart phone" with which you check FB, and your settings need to be adjusted (this is a natural progression given how fast the technology is "improving"); perhaps it _is_ in the privacy settings on your FB account (to be honest, even I do not read every little clause on FB); perhaps it's some other issue that hasn't yet arisen.

What I really think is happening is quite simple: I think there's a FB "scare" going around that has us (the general public) looking for a reason to switch to Goggle+. Ok, that might be a bit extreme, yes, but I don't think there's any reason at all to get all in an uproar about this phone book issue. Just fix it if it bothers you...

Preheat oven to 350F. In a large bowl, stir together the flour, sweetener, baking soda, and salt. Add the margarine (I waited until it had softened to room temperature so that it was easier to mix up), nut butter, and vanilla, and stir together until well mixed. I added a cup of vegan chocolate chips. Spoon a heaping tablespoon (I used a small cookie baller, packed in) of dough onto a cookie sheet and press flat with your fingers. Use a fork to make a criss-cross pattern on top of each cookie. Bake for 12-15 minutes or until edges are browned. Let cool before removing from cookie sheet (seriously! let these cool or they'll simply break apart when you slide the spatula under them...wait the full 5 minutes). Makes 10-18 cookies, depending on size.

That said, I may still occasionally drop in and talk about an awesome friend here or there...

Onward now, to the final post!

Zeppelyn. I know...a rockin' name! The thing is, for professional reasons, I am not linking Zeppelyn. I know, I know, but I want to honor her privacy, since this is my personal website and not hers!

Anyways....Zeppelyn and I met in the Spring 2011--I know, so very recently--in a Doctoral Research Seminar (essentially it was a Prospectus writing course). Now, I'll share with you the little known fact that neither of us finished our Prospectus, but we kicked some tail in figuring out how to write our dissertations----we got this!

So, how can I be such good friends with someone I just met? I don't know really...it just happened, and I'm guessing she didn't bargain for a classroom friendship either! But, I adore her, her mister, her choice of local establishments, and her conversation! And, hopefully, it'll continue for many years into the future!

PS ROCK the Prelims, Zeppelyn!bourgeois galhttp://www.blogger.com/profile/14485015013323978298noreply@blogger.com2
