I have lost
and found this recipe too many times to mention, and so
finally, I'm pasting both the link to the recipe and the recipe itself to my
blog. It's so simple and easy that you really can't NOT make it, and it's VEGAN
to boot!
What you need:

ripe bananas, mashed
2
tablespoons olive oil
2
cups flour
3/4
cup sugar
1
teaspoon salt
1
teaspoon baking soda
1/2
cup walnuts, coarsely chopped
What
you do:
Preheat
oven to 350 degrees Fahrenheit.
Grease
a loaf pan.
Mix
the mashed bananas and oil in a large bowl.
Stir
in the flour, vegan sugar, salt, and baking soda.
Mix
in the nuts.
Pour
the well-blended batter into the greased pan, top with nuts (if desired), and
bake for 45 minutes-1 hour.
Remove, let cool, slice, and serve.
