Rudolphs Spritzer--A Holiday Drink!

Also, for a recent holiday party, I put this awesome punch together--delicious and a hit with our friends!

Ingredients

5 cups orange juice $
2 cups chilled lemon-lime soft drink $
1 1/2 cups vodka 
1/2 cup maraschino cherry juice 
1/4 cup fresh lemon juice $
Garnishes: lemon slices, fresh rosemary sprigs $

Preparation

1. Stir together all ingredients; serve over ice. Garnish, if desired.

Slow Cooker Butternut Squash Soup Recipe

Because I don't want to lose recipes, I sometimes post recipes from the internet. This is one of those moments... I made this awesome butternut squash soup for a holiday party we have in December 2014, and it was amazing--sweet but still savory!

YUM!!!

Our favorite butternut squash soup recipe...and the best part? It is made in the slow cooker! Garnish with maple roasted chickpeas for an extra special soup!

ingredients:

For the Butternut Squash Soup:
1 medium yellow onion, chopped
3 medium carrots, peeled and chopped
1 medium butternut squash, peeled, seeded and chopped into 1-inch cubes (about 5 cups)
1 large apple, peeled and chopped (I used Granny Smith)
2 (14 oz) cans low sodium vegetable broth
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons maple syrup
Salt and freshly ground black pepper, to taste
For the Maple Roasted Chickpeas:
1 (15 oz) can Libby's Organic Garbanzo Beans (chickpeas)
1 tablespoon canola oil
1 1/2 tablespoons pure maple syrup
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon salt

directions:

1. Add the onion, carrots, butternut squash, and apple to the slow cooker. Pour the vegetable broth over all of the ingredients. Cook on low for 6 hours or on high for 3 1/2 to 4 hours.
2. Once vegetables are cooked and soft, puree the soup using an immersion blender. Add the cinnamon, nutmeg, and maple syrup. Season with salt and pepper, to taste. If you don't have an immersion blender, you can transfer the soup to a blender (in batches) and puree until smooth. Pour the soup back into the slow cooker and season with spices and maple syrup. 
3. While the soup is cooking in the slow cooker, make the maple roasted chickpeas. Preheat the oven to 375 degrees F. Rinse and drain the chickpeas and pat dry with a towel. Remove the skins by rolling them on the towel. In a small bowl, combine the canola oil, maple syrup, brown sugar, cinnamon, and salt. Place the chickpeas on a large baking sheet. Pour the maple syrup mixture over the chickpeas and toss until chickpeas are well coated. Place in the oven and bake for 40-45 minutes, stirring every 15 minutes or so. Remove from the oven when chickpeas are crunchy. 
4. Pour soup into bowls and garnish with maple roasted chickpeas. Serve immediately.

Spicy Cauliflower Deliciousness

This is not my recipe....seriously, it's not. One of my friends found it here: http://amazingpinterestworld.blogspot.com/2012/11/spicy-buffalo-cauliflower.html Then she shared it with me at a holiday gathering recently.

Holy Cauliflower, Batman! Bang! Zap! Pow! Amazingness!


Ingredients
  • 1 head cauliflower
  • For the batter:
  • Dash of Frank’s Original Hot Sauce, or whatever kind you like
  • ½ c. white rice flour
  • ½ c. water
  • Pinch salt

  • For the Buffalo sauce:
  • ¼ c. Frank’s Hot Sauce
  • ¼ c. oil, canola oil works best
  • Pinch salt
Instructions
  1. Preheat oven to 450 degrees. Mix together the batter ingredients in a small bowl. Dip the cauliflower in the batter until coated evenly then place on greased baking sheet. Bake for about 15 minutes or until the batter hardens.
  2. Mix together sauce ingredients in a small bowl. Once the cauliflower are done baking, brush them with the hot sauce mixture and bake again for a few more minutes, until cauliflower is crispy.
  3. Remove from oven. You may want to add a bit more buffalo sauce to taste.
  4. Enjoy!

On being an ally

I have always considered myself to be a LGBT ally. I think my story starts with my mother. My mother is not always open about everything, but when I was a kid, she always had LGBT friends. I remember two of those friends most vividly: Pat (or Booboo) and Erica (or Steve).

Pat was a lesbian and was my mother's closest friend when I was a kid. She was always around, always bring over her girlfriends, always talking about women, and always fun! She was maybe my favorite person ever. I always knew that I could be myself around her, and I always felt loved by her. She might've gotten into a bit of trouble as the years went on--drugs and other things--but she was such a powerful force in my ally-ness.

Erica--well, Erica was a drag queen. I don't recall ever seeing Erica out of costume. I do recall seeing Erica perform several times during my youth. But, I don't remember much else.

And, of course, there's my mother. She's heterosexual, as far as I know. And, sometimes she's a little bit racists. And, frankly, sometimes she says things that I read as homophobic as well, but I don't think that she thinks those comments are homophobic. For instance, she'll refer to someone she sees as a "faggot." I don't particularly care for this word, but my mother is in her 50s, so it's a word that's embedded in her language. Even though she knows the negative connotation behind that word--oh, I've told her--she still says it.

I don't think that my mother ever officially said anything like, "love everybody" or "be an ally." Instead, I think she showed me that I should look for the good in people and that it's okay to be open to diversity.


So, what does being an ally mean to me? How can I be an ally?

Well, GLAAD (Gay & Lesbian Alliance Against Defamation--GLAD is different) says there are 10 ways to be an ally & a friend. Some of those are:
*be a listener
*be open-minded
*be willing to talk
*be inclusive and invite LGBT friends to hang out with your friends and family.
*don't assume that all your friends and co-workers are straight.
*homophobic comments and jokes are harmful. let your friends, family and co-workers know that you find them offensive.
*confront your own prejudices and homophobia
*defend your LGBT friends against discrimination
*believe that all people, regardless of gender identity and sexual orientation, should be treated with dignity and respect

Some of the other things that I think are important about being a straight ally are:
*to stay informed--read, listen to radio shows and podcasts, ask a member of the LGBT community
*support equality


This one is hard to iterate...but I want to make sure I'm always being the best ally I can be and that I'm always being reflexive about my heterosexual privilege.

November Pictures

In the Fall 2011, SIUC faculty went on strike...this was one of the cartoons hanging around campus that made me giggle and contemplate.

We've barely had the new Subaru 6 months, and already 9000 miles! yikes! Must be all those trips we took over the summer!

The best vegan cheese spread I've tasted to date! I made nachos and nachos and more nachos, and then I couldn't find it at my local Whole Foods. This package I found at the St Louis Whole Foods. Yum!

We headed to a conference in New Orleans in November, and our hotel room (at the beautiful Chateau Bourbon) overlooked Bourbon Street....this is the daytime shot! Fun times for sure!

When I was in Chicago in October, my cousin (pictures below) and I went on a boat tour of Chicago Architecture....this was one of the amazing views!

My cousin's cat, Daisy, usually avoids me like I've got the plague, but on this trip, she was even sleeping on my lap! So sweet...makes me miss Sammie and want another kitty.

At the Hotel Orrington in Evanston, IL. Seriously awesome and easily accessible vegan food in Evanston, and the hotel was beautiful!

It doesn't look like much in this photo, but compare the width to that of the two car driveway at left...yeah...that's how many leaves Dr.Blueberry and I (mostly I) raked out of this huge yard! Wowza!

Our dryer went kapooie, but this nice man came by and fixed it for the perfect price.....it was a bit scary watching him take it apart and to see the burnt wire that was the problem--can we say house fire fear!?

On a very short hike in WV, I hurt my foot pretty badly...this is me keeping my leg iced and propped up!

Pictures from August...

I'm obviously behind, but here're a few of the pictures I took during the month of August. Enjoy!
Moving from Illinois to West Virginia--Dr.Blueberry drive the Budget truck, and I drove his car behind him the whole way...boring!

And, yet, when we arrived in WV, this is what we found---beautiful! The bottom half of the house in the back is built into the mountain, and the front yard is short (picture below) with a mountain on the other side of the road.

A (non-vegan) chocolate eclair, not eaten by me, but by my friend Satoshi. Doesn't it look delish!?

I stayed at a friend's place for a couple of weeks, and the day I mowed the lawn, I looked out and saw this adorable little friend hanging out. He clearly liked the smell of fresh grass also!

Next to the Recycling Center in town...I was only slightly freaked out, for just a brief moment!

As I cleaned my office in Carbondale, I came across this little gem. My colleague Chris had drawn it out during the Fall 2010 semester as part of a conversation about ethical eating. I love this picture so much!

A beverage in town was necessary on this day....this Yuengling was delightful!

Friend Friday: Zeppelyn

Because I've had such a hard time keeping up with the "Friend Friday" posts, this will be my last weekly entry. That said, I may still occasionally drop in and talk about an awesome friend here or there...

Onward now, to the final post!

Zeppelyn. I know...a rockin' name! The thing is, for professional reasons, I am not linking Zeppelyn. I know, I know, but I want to honor her privacy, since this is my personal website and not hers!

Anyways....Zeppelyn and I met in the Spring 2011--I know, so very recently--in a Doctoral Research Seminar (essentially it was a Prospectus writing course). Now, I'll share with you the little known fact that neither of us finished our Prospectus, but we kicked some tail in figuring out how to write our dissertations----we got this!

So, how can I be such good friends with someone I just met? I don't know really...it just happened, and I'm guessing she didn't bargain for a classroom friendship either! But, I adore her, her mister, her choice of local establishments, and her conversation! And, hopefully, it'll continue for many years into the future!


PS ROCK the Prelims, Zeppelyn!

Friend Friday: Wendy

There are probably a lot of things I could tell you about Wendy....but, well, let's face it, they aren't appropriate for internet documenting.

So, I'll just tell you that we've been pals for many years... We started working together back in 1997 (wowza!) at the Fort Worth Star-Telegram, but we probably became good friends in 1998/1999. We've had a lot of good times over the years, and I'm glad that even though I no longer work at the paper, we've been able to keep in touch!

Oh, sweet sweet Vincent...

I met Vincent at a conference. He is a dear, and he is a dear to e.v.e.r.y.o.n.e. he meets--it's amazing, I've never met anyone as gracious as he is. And, he gives the best big bear hugs, which makes him just a little bit more awesome!

What are the things you might want to know about Vincent....? Well, he's a talented performer. He's a great teacher. He's kind and understanding. He's the best cheerleader a friend could want. He's, well the long and short of it is that he's, FAB!

Friend Friday: T-t-Traci!

And, by Friday, I clearly mean Monday...ugh, this writing Prelims stuff is taking over my life! One more week.

Ok, on to the friend!

Traci. I only reconnected with Tracy via FB, but I'm so glad that we connected. We met at Texas Tech University many many moons ago during our undergraduate years. We used to have so much fun together, but then I decided I didn't want to live in the Panhandle and left that place. We lost touch for...let's just say too many years...

In light of our recent reconnection, I'll simply say this: Traci is kinda awesome. Our year together at Tech was rad. I'm glad we reconnected. She still seems pretty rad. And, if her FB speaks the truth, she is celebrating 8 years with her love today.

Yay for reconnections!

Sunday Funday

Ok, not really...still writing prelims, so there's not much fun happening these days. This week, though, we went bowling, survived not one but TWO nasty storms, had a beautiful rainbow to enjoy, and wrote, wrote, wrote.

This little pro-life baby is getting me through the writing process. Ok, not really, but I do like this picture. I move the baby pretty much everyday to a new spot, and when I glance up and see it, it makes me giggle...it reinvigorates me! Yay for writing!!

Friend Friday: Shannon

I don't know how I could not write about my longest running friend, Shannon. Now, I've probably got this story all wrong, but in my telling of this story, Shannon and I have been friends since the day she was born. You see, she's a year younger than I, by 363 days (that's right), and since our folks have lived on the same street since she was born, I have to assume this is correct.

That said, we've been friends for (shhhh) 33 (almost 34) years! (happy early birthday, Shannon!)

Ok, so what I can I tell you about Shannon?
Well, she's sweet, always has been. She has three adorable children; though, in all honesty, I think I've only met one of them...that's a different story! She's great with kids! She's smart; she's working on her nursing degree these days, I believe. She's just generally swell...

She used to share her barbies with me...oh, we played barbies so very much! We swam together. We played in the yard together. We caught horn toads together in our yards. We road bikes. We roller skated. We had soooo much fun!

And, then one day, we grew apart...but not in that "I don't like you" way...nono, we grew apart in that "we don't live next door to each other" way. My parents went splitsy, and my dad continued to live across the road, so I only saw her every other weekend or so. And, as time went on, we went to different schools, hung out with different crowds, and blah blah blah. But, it doesn't change the fact that she's always been my first and dearest friend, and though we are very different (and, we are!), I know we're still buds! And, nowadays, we have the book of faces to keep in touch...

See, the book of faces is good for some things!!!

Recipe Thursday: BBQ Seitan

I think I mentioned early on that I'd share this recipe. It's super simple...

BBQ Seitan Sandwich

1 package seitan (as I've mentioned a million times before, I prefer Westsoy), chopped (you can also chop it in the pan with your spatula if you're good at that sort of thing) to your desired consistency (I like finely chopped)
BBQ sauce (I prefer KC Master piece)
buns, pickles, mustard, onions, etc. ("the fixins")

In a lightly oiled pan, cook seitan to desired consistency--I prefer to cook it to a little crispy because it adds to the texture. When prepared, add bbq sauce and let simmer until warm. When warm, spoon onto bun and top with preferred "fixins."

This recipe works really well in bulk too. We made it for some friends who were getting married and doing potluck style bbq, cooking up about 6-8 packages, and after it was prepared following the above directions, we tossed it into a crock pot to serve to our friends. It tasted awesome and held up great!
