Eggs have been giving me a great deal of heartburn when I eat them lately---perhaps its because I like them over-easy and the yolks are all runny and delicious. And, because of this, I've been trying to eat less of them these days. So, I thought I'd share a tofu scramble recipe you. Now....this is modified from the How It All Vegan (pronounced like began, but with a V) because I'm a bit picky (ok, let's face it, I despise onions...in any form, color, flavor...gross!), so bear with me a bit.
Tofu Scramble
1-2 T minced garlic
1 t EVOO or Canola or Vegetable oil
1 pkg firm tofu, crumbled
1/4 t turmeric (take care to not get this on your clothes---it once was used as a clothing dye and will stain!)
dash cumin
1 T Braggs (if you don't have a bottle of Braggs around, try soy sauce, but you might want to modify the amount you include...soy sauce can be quite salty)
salt/pepper to taste
In a skillet, add the garlic and oil and saute on medium (some people like to add onion here as well--to taste). Add the tofu (and it can be crumbled or broken up in the skillet or in the pan, using the spatula), turmeric, cumin, and Braggs. Saute to a consistency you like---I prefer the scramble a bit more firm (and somewhat crunchy-ish) in consistency, and so I might recommend at least 5 minutes....maybe 10.
Enjoy with potatoes, peppers, mushrooms, and the like. Totz delish!

oh, girl! don't give me credit for that recipe- it's all cooking light! im already paranoid that i am violating all their copyright laws for posting their recipes and pictures... dang comm department freaking me out about plagiarism and copyrights! bwahaha!
